  • 45 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (or to taste)
  • 1 teaspoon sea salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 cup fresh basil leaves, torn or chopped
  • 1216 oz spaghetti or preferred pasta
  • Optional: 1-2 teaspoons balsamic glaze or red wine vinegar
  • Optional: Freshly grated Parmesan cheese for serving
  • Reserved pasta water

Instructions

  • Preheat oven to 400°F (200°C).
  • On a large baking sheet, combine halved cherry tomatoes and peeled garlic cloves. Drizzle with olive oil, red pepper flakes, salt, and black pepper. Toss to coat evenly.

  • Transfer roasted tomatoes and garlic to a large skillet. Gently mash some of the tomatoes to release juices and create a sauce. Simmer over medium-low heat for 5 minutes.
  • Stir in fresh basil. Taste and adjust seasoning as needed. Add balsamic glaze or red wine vinegar if desired.
  • Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water, then drain.
