Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, peeled
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (or to taste)
- 1 teaspoon sea salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1/2 cup fresh basil leaves, torn or chopped
- 12–16 oz spaghetti or preferred pasta
- Optional: 1-2 teaspoons balsamic glaze or red wine vinegar
- Optional: Freshly grated Parmesan cheese for serving
- Reserved pasta water
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine halved cherry tomatoes and peeled garlic cloves. Drizzle with olive oil, red pepper flakes, salt, and black pepper. Toss to coat evenly.
- Roast for 20-25 minutes, or until tomatoes are blistered and garlic is soft and golden.
- Transfer roasted tomatoes and garlic to a large skillet. Gently mash some of the tomatoes to release juices and create a sauce. Simmer over medium-low heat for 5 minutes.
- Stir in fresh basil. Taste and adjust seasoning as needed. Add balsamic glaze or red wine vinegar if desired.
- Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water, then drain.
- Add cooked spaghetti to the skillet with the sauce. Toss, adding reserved pasta water as needed to create a glossy sauce.
- Serve immediately, topped with Parmesan cheese if using.
