This exquisite sauce features sweet cherry tomatoes roasted until bursting, creating a vibrant, flavorful base with minimal effort. It’s a delightful and fresh take on a classic pasta dish.
Ingredients
- 2 lbs (about 900g) cherry or grape tomatoes
- 6–8 cloves garlic, peeled and lightly smashed
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp coarse sea salt, or to taste
- 1/2 tsp freshly ground black pepper, or to taste
- 1/4–1/2 tsp red pepper flakes (optional, for heat)
- 1/2 cup fresh basil, roughly chopped or torn
- Optional: 1/4 cup dry white wine or vegetable broth
- Optional: Drizzle of balsamic glaze for serving
Instructions
- Preheat oven to 400°F (200°C). Spread cherry tomatoes and smashed garlic cloves on a large rimmed baking sheet.
- Drizzle generously with olive oil. Season with salt, pepper, and red pepper flakes (if using). Toss to coat evenly.
- Roast for 25-35 minutes, or until tomatoes are shriveled, bursting, and lightly caramelized.
- Remove from oven and gently mash the roasted tomatoes and garlic directly on the pan using a fork or potato masher.
- Transfer the mashed sauce to a saucepan. If desired, add white wine or broth and simmer gently over low heat for 5-10 minutes to deepen flavors.
- Remove from heat, stir in fresh basil. Taste and adjust seasonings as needed.
- Serve warm over your favorite pasta, garnished with fresh Parmesan or a drizzle of balsamic glaze.
