This exquisite sauce features sweet cherry tomatoes roasted until bursting, creating a vibrant, flavorful base with minimal effort. It’s a delightful and fresh take on a classic pasta dish.


Ingredients

  • 2 lbs (about 900g) cherry or grape tomatoes
  • 68 cloves garlic, peeled and lightly smashed
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 1 tsp coarse sea salt, or to taste
  • 1/2 tsp freshly ground black pepper, or to taste
  • 1/41/2 tsp red pepper flakes (optional, for heat)
  • 1/2 cup fresh basil, roughly chopped or torn
  • Optional: 1/4 cup dry white wine or vegetable broth
  • Optional: Drizzle of balsamic glaze for serving

Instructions

  • Preheat oven to 400°F (200°C). Spread cherry tomatoes and smashed garlic cloves on a large rimmed baking sheet.
  • Drizzle generously with olive oil. Season with salt, pepper, and red pepper flakes (if using). Toss to coat evenly.
  • Roast for 25-35 minutes, or until tomatoes are shriveled, bursting, and lightly caramelized.
  • Remove from oven and gently mash the roasted tomatoes and garlic directly on the pan using a fork or potato masher.
  • Transfer the mashed sauce to a saucepan. If desired, add white wine or broth and simmer gently over low heat for 5-10 minutes to deepen flavors.
  • Remove from heat, stir in fresh basil. Taste and adjust seasonings as needed.
  • Serve warm over your favorite pasta, garnished with fresh Parmesan or a drizzle of balsamic glaze.
