Description
Craft this incredibly flavorful cherry tomato spaghetti sauce with ease, bringing vibrant, fresh tastes to your table. It’s a simple, step-by-step recipe that guarantees a delicious homemade meal.
Ingredients
- 2 lbs cherry tomatoes, washed
- 3 cloves garlic, minced
- 1 small yellow onion, finely diced
- 1/4 cup extra virgin olive oil
- 1/2 tsp dried oregano (or 1 sprig fresh)
- 1/4 cup fresh basil leaves, torn
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- 1 lb spaghetti or pasta of choice
- Freshly grated Parmesan cheese, for serving
Instructions
- Prep Ingredients: Wash cherry tomatoes. Mince garlic and finely dice onion.
- Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add onion and cook until translucent (5-7 mins). Add garlic and cook until fragrant (1 min), being careful not to burn.
- Simmer Tomatoes: Add cherry tomatoes to the pan. Season with salt, pepper, and dried oregano (if using). Cook over medium-low heat, stirring occasionally, until tomatoes burst and release juices, and sauce thickens slightly (15-20 mins). Lightly press tomatoes with a spoon to aid breakdown.
- Season & Adjust: Taste the sauce and adjust salt, pepper, and add a pinch of sugar if needed to balance acidity. If too thick, add a splash of reserved pasta water.
- Finish & Serve: Remove from heat. Stir in fresh basil. Add cooked al dente pasta directly to the sauce and toss to coat. Serve immediately with freshly grated Parmesan cheese.
