This vibrant cherry tomato spaghetti sauce is a burst of fresh flavor, perfect for a quick weeknight meal. It’s easy to make and tastes like sunshine in a bowl.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, minced
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Pinch of granulated sugar (optional, for balance)
- 1/4 cup fresh basil, chopped
- 1–2 sprigs fresh oregano or thyme (optional)
- Pinch of red pepper flakes (optional, for heat)
- Splash of balsamic glaze (optional, for depth)
Instructions
- 1. Prep Ingredients: Wash tomatoes. Mince garlic. Chop fresh basil and have other fresh herbs ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.
- 3. Cook Tomatoes: Add cherry tomatoes, salt, pepper, and sugar (if using) to the pan. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes soften and burst, releasing their juices.
- 4. Mash for Texture: Use the back of a spoon or a potato masher to gently mash any remaining whole tomatoes to your desired consistency.
- 5. Finish Sauce: Reduce heat to low and simmer for 5-10 minutes for flavors to meld. Stir in fresh basil and other fresh herbs. Taste and adjust seasoning. Add balsamic glaze if desired. Serve immediately with pasta or your favorite dish.
