This simple yet incredibly flavorful cherry tomato spaghetti sauce recipe features roasted cherry tomatoes for a deep, sweet, and tangy taste. It’s perfect for a quick and delicious family meal any night of the week.
Ingredients
- 2 lbs (about 900g) cherry or grape tomatoes
- 1/4 cup extra virgin olive oil, plus more for serving
- 4–5 cloves garlic, thinly sliced
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil leaves, roughly chopped
- 1 tablespoon fresh oregano or thyme, roughly chopped
- 1/2 teaspoon granulated sugar (optional, to balance acidity)
- 1–2 teaspoons balsamic vinegar (optional)
- Cooked spaghetti or your favorite pasta, for serving
- Fresh Parmesan cheese, for serving
Instructions
- 1. Prep Tomatoes & Aromatics: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, olive oil, sliced garlic, salt, pepper, and red pepper flakes (if using). Toss to coat evenly and spread in a single layer.
- 2. Roast Tomatoes: Roast for 25-35 minutes, or until tomatoes are softened, bursting, and slightly caramelized.
- 3. Simmer Sauce: Transfer roasted tomatoes and all juices to a medium saucepan. Add fresh basil and oregano/thyme. Bring to a gentle simmer over medium heat and cook for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
- 4. Mash to Consistency: Using a potato masher or the back of a spoon, gently mash the tomatoes to your desired chunky consistency. For a smoother sauce, use an immersion blender for a few pulses.
- 5. Season & Serve: Taste and adjust seasonings (salt, pepper, sugar, balsamic vinegar if using). Serve immediately over hot pasta, garnished with extra fresh basil and Parmesan cheese.
