Description
This vibrant and fresh cherry tomato spaghetti sauce celebrates the natural sweetness of ripe cherry tomatoes. It’s an easy-to-make, weeknight-friendly recipe that delivers incredible flavor.
Ingredients
- 2 lbs (approx. 4 cups) cherry tomatoes, washed
- 1/4 cup extra virgin olive oil (good quality)
- 1 small yellow onion, finely diced
- 4 cloves garlic, minced
- 1/4 cup fresh basil, roughly chopped (plus more for garnish)
- 1 tbsp fresh oregano, chopped (or 1/2 tsp dried oregano)
- 1 tbsp balsamic vinegar or dry red wine
- 1/2 – 1 tsp salt (to taste)
- 1/4 tsp black pepper (to taste)
- Pinch of sugar (optional, to balance acidity)
- Cooked spaghetti or pasta of your choice, for serving
- Freshly grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add diced onion and cook until softened and translucent, about 5-7 minutes.
- Add minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn.
- Add cherry tomatoes to the pan. Season with salt, pepper, and optional pinch of sugar. Pour in balsamic vinegar or red wine.
- Stir well, then bring to a gentle simmer. Reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally and gently mashing some tomatoes.
- Remove from heat. Stir in fresh oregano and most of the fresh basil. Taste and adjust seasoning as needed.
- For a smoother sauce, use an immersion blender or potato masher to achieve desired consistency.
- Serve immediately over cooked spaghetti, garnished with remaining fresh basil and Parmesan cheese.
