Description
An incredibly fresh and flavorful cherry tomato spaghetti sauce, made by roasting sweet cherry tomatoes and garlic for an unbeatable depth of flavor. Perfect for a quick weeknight meal or an elegant dinner.
Ingredients
- 2 lbs (approx. 900g) cherry or grape tomatoes
- 6–8 cloves garlic, peeled (whole)
- 1/4 cup extra virgin olive oil
- 1 tsp coarse sea salt (or to taste)
- 1/2 tsp freshly ground black pepper (or to taste)
- 1/2 cup fresh basil leaves, packed (plus more for garnish)
- Optional: Pinch of red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, spread the cherry tomatoes and whole garlic cloves in a single layer. Drizzle generously with olive oil, sprinkle with sea salt, black pepper, and optional red pepper flakes. Toss gently to coat.
- Roast for 25-30 minutes, or until the tomatoes are soft, blistered, and some have burst. The garlic should be fragrant and lightly golden.
- Carefully transfer the roasted tomatoes, garlic, and all pan juices to a blender or food processor. Add the fresh basil leaves.
- Pulse until your desired consistency is reached – smooth for a uniform sauce or slightly chunky for a more rustic feel. Alternatively, you can mash the roasted ingredients with a fork or potato masher.
- Pour the sauce into a saucepan and bring to a gentle simmer over medium-low heat for 5-10 minutes, allowing the flavors to meld.
- Taste and adjust seasoning as needed (add more salt, pepper, or a pinch of sugar if desired).
