Ingredients
- 1.5 lbs (about 680g) cherry tomatoes, whole
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn or roughly chopped
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Optional: 1/4 teaspoon red pepper flakes
- Optional: Freshly grated Parmesan cheese, for serving
- Optional: 1/4 cup reserved pasta water
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Mince garlic.
- 2. Sauté Aromatics: In a large skillet or wide pot, heat olive oil over medium-low heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown.
- 3. Cook Tomatoes: Add whole cherry tomatoes, salt, and pepper to the skillet. Cover and cook for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Mash & Reduce: Uncover the pan. Use the back of a wooden spoon or a potato masher to gently crush any remaining whole tomatoes. Continue to cook for another 5-10 minutes, uncovered, allowing the sauce to thicken slightly. Add red pepper flakes now, if using.
- 5. Finish & Serve: Remove from heat. Stir in fresh basil. Taste and adjust seasoning as needed. If desired, stir in a splash of reserved pasta water for a silkier consistency. Serve immediately over your favorite pasta, topped with Parmesan cheese if desired.
