Ingredients
- 2 lbs (approx. 4 cups) fresh cherry tomatoes, halved
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- ½ small yellow onion, finely diced (optional)
- ¼ cup dry red wine or 1 tbsp balsamic vinegar (optional)
- ½ cup fresh basil leaves, roughly chopped
- 2 tbsp fresh oregano leaves, roughly chopped (or 1 tsp dried)
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- Red pepper flakes (optional, for heat)
Instructions
- Wash and halve all cherry tomatoes. Mince garlic and finely dice onion.
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and diced onion (if using). Sauté for 3-5 minutes until softened and fragrant, being careful not to brown the garlic.
- Add halved cherry tomatoes to the pan. Increase heat to medium-high and cook for 10-15 minutes, stirring occasionally, until tomatoes begin to burst and soften. Gently mash some of the tomatoes with the back of your spoon.
- If using, add red wine or balsamic vinegar and simmer for 1-2 minutes until mostly evaporated. Reduce heat to low, cover, and simmer for another 15-20 minutes, stirring occasionally, allowing flavors to meld.
- Remove from heat. Stir in fresh basil and oregano. Taste and adjust seasoning with salt, pepper, and a pinch of sugar if needed to balance acidity.
