Ingredients

  • 2 lbs (approx. 900g) fresh cherry or grape tomatoes
  • 1/4 cup extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 45 cloves garlic, minced
  • 1 tbsp tomato paste (optional, for deeper flavor)
  • 1/4 cup dry red wine (optional)
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1 tbsp fresh oregano, chopped (or 1 tsp dried)
  • Salt and freshly ground black pepper to taste
  • Pinch of sugar (optional, to balance acidity)
  • Reserved pasta water, for finishing

Instructions

  • 1. Prep Ingredients: Wash tomatoes. Mince garlic and dice onion.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 mins). Add garlic and cook until fragrant (1 min).
  • 3. Cook Tomatoes: Add cherry tomatoes to the skillet. Cook, stirring occasionally and gently crushing some tomatoes, until they burst and release juices (10-15 mins).
  • 4. Simmer Sauce: Stir in tomato paste (if using) and cook for 1-2 minutes. Deglaze with red wine (if using), simmering until almost evaporated. Reduce heat to low, cover, and simmer for 15-20 minutes, allowing flavors to meld.
  • 5. Finish & Season: For a smoother sauce, carefully blend with an immersion blender or in batches in a regular blender. Stir in fresh basil and oregano. Season generously with salt, pepper, and a pinch of sugar if needed to balance acidity. Serve immediately with your favorite pasta.
