Ingredients
- 1.5 lbs (about 6 cups) cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- 1/4 teaspoon red chili flakes (optional, for heat)
- 2 tablespoons dry white wine or vegetable broth (optional)
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or your favorite pasta
- Freshly grated Parmesan cheese, for serving
Instructions
- Wash and prepare cherry tomatoes. Mince garlic and chop basil.
- Heat olive oil in a large skillet over medium-low heat. Add garlic and chili flakes (if using); cook until fragrant, about 1-2 minutes. Do not brown.
- Add cherry tomatoes to the pan. Increase heat to medium. Cook, stirring occasionally and gently mashing some tomatoes with a spoon, for 8-12 minutes until they burst and release their juices.
- Stir in white wine or broth (if using) and simmer for 1 minute. Reduce heat to low and simmer for another 5-10 minutes, allowing flavors to meld.
- Remove from heat. Stir in fresh basil. Season generously with salt and pepper.
- Serve immediately over cooked spaghetti, garnished with extra fresh basil and Parmesan cheese.
