Ingredients
- 2 pints (approx. 2.5 cups) cherry or grape tomatoes
- 3–4 tablespoons extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon red pepper flakes (optional)
- 1/2–1 teaspoon granulated sugar (optional, for balance)
- Salt and freshly ground black pepper, to taste
Instructions
- Wash tomatoes; leave whole or halve large ones. Mince garlic and chop basil.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); cook 30 seconds until fragrant.
- Add cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until tomatoes soften and burst. Gently press any unburst tomatoes with a spoon.
- Reduce heat to low and simmer for 10-15 minutes, allowing flavors to deepen and sauce to thicken slightly.
- Remove from heat. Stir in fresh basil. Season generously with salt, pepper, and optional sugar to taste. Serve immediately over pasta.
