A vibrant and easy-to-make cherry tomato spaghetti sauce bursting with fresh, sweet flavors. Perfect for a quick weeknight meal or a delightful family dinner.
Ingredients
- 1.5 lbs (approx. 680g) cherry tomatoes, washed
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt to taste
- Freshly cracked black pepper to taste
- Optional: Balsamic glaze for drizzling
- Optional: 1 Parmesan rind for simmering
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using), and sauté for 1 minute until fragrant.
- Add cherry tomatoes to the pan. Season generously with salt and pepper. Cover and simmer for 10-15 minutes, stirring occasionally, until tomatoes burst and soften. Add Parmesan rind if using.
- Remove from heat. Stir in fresh basil. Use a potato masher to gently crush any remaining whole tomatoes to your desired consistency. Remove Parmesan rind.
- Taste and adjust seasonings as needed. Serve immediately over your favorite pasta, drizzled with balsamic glaze if desired.
