Unlock vibrant flavors with this ridiculously easy cherry tomato spaghetti sauce. Perfectly ripe tomatoes burst to create a fresh, delicious, and quick weeknight meal.
Ingredients
- 1.5 lbs (about 4–5 cups) cherry or grape tomatoes, halved
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- 12 oz spaghetti or your favorite pasta (cooked according to package directions)
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- Prep Tomatoes: Wash and halve all cherry tomatoes.
- Roast/Sauté Tomatoes: In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add halved tomatoes, a pinch of salt, and pepper. Cook, stirring occasionally, for 10-15 minutes until tomatoes soften and burst. Alternatively, roast in a 400°F (200°C) oven for 20-30 minutes after tossing with olive oil, salt, and pepper.
- Add Aromatics: Add minced garlic and red pepper flakes (if using) to the softened tomatoes. Sauté for another 1-2 minutes until fragrant, being careful not to burn the garlic.
- Simmer Sauce: Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld. If you prefer a smoother sauce, gently crush some tomatoes with the back of a spoon.
- Finish with Basil: Remove from heat and stir in the fresh basil. Taste and adjust seasoning with more salt and pepper if needed.
- Serve: Toss the sauce with freshly cooked spaghetti. Garnish with additional fresh basil and grated Parmesan cheese, if desired.
