Cherry Tomato Spaghetti Sauce

Description

An incredibly easy and flavorful homemade spaghetti sauce featuring sweet, bursting cherry tomatoes. Perfect for a delicious weeknight meal that tastes gourmet.


Ingredients

  • 1 lb cherry or grape tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 lb spaghetti or your favorite pasta
  • 1 cup reserved pasta water
  • Freshly grated Parmesan cheese, for serving

Instructions

  • 1. Halve the cherry tomatoes and mince the garlic. Have all other ingredients measured and ready.
  • 2. Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant, being careful not to burn.
  • 3. Add halved cherry tomatoes, dried oregano, salt, and pepper to the skillet. Increase heat to medium and cook for 8-10 minutes, stirring occasionally, until tomatoes soften and burst.
  • 4. Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken. Cook pasta according to package directions, reserving 1 cup of pasta water before draining.
  • 5. Remove sauce from heat and stir in fresh basil. Taste and adjust seasonings as needed.
  • 6. Add drained pasta and 1/2 cup reserved pasta water to the skillet with the sauce. Toss vigorously to combine, adding more pasta water as needed until the sauce coats the pasta beautifully. Serve immediately with Parmesan cheese.
