Description
This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor, incredibly easy to make, and comes together in one pan. It’s the perfect quick and delicious weeknight meal.
Ingredients
- 1.5 lbs (about 4 cups) ripe cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 5–6 cloves garlic, thinly sliced or minced
- 1/2 – 1 teaspoon red pepper flakes (optional, to taste)
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Salt and freshly ground black pepper, to taste
- Optional: 1-2 teaspoons balsamic glaze, for serving
Instructions
- 1. Prep Tomatoes & Aromatics: Rinse cherry tomatoes. Slice or mince garlic. Have basil ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-low. Add garlic and red pepper flakes; sauté 1-2 minutes until fragrant.
- 3. Simmer Tomatoes: Add tomatoes, salt, and pepper to the pan. Cover and simmer 8-12 minutes, stirring occasionally, until most tomatoes burst.
- 4. Mash & Season: Uncover and gently mash remaining whole tomatoes. Simmer uncovered for 5-7 minutes to thicken slightly. Taste and adjust seasonings.
- 5. Finish: Remove from heat. Stir in fresh basil. Drizzle with balsamic glaze if desired. Serve immediately with pasta.
