Ingredients
- 1.5 lbs (about 4–5 cups) cherry tomatoes, whole or halved if large
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/4 cup water or vegetable broth (plus more if needed)
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup freshly grated Parmesan cheese (plus more for serving)
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and freshly cracked black pepper to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- 1. Prep Ingredients: Rinse cherry tomatoes. Mince garlic. Chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
- 3. Cook Tomatoes: Add cherry tomatoes to the skillet. Cook, stirring occasionally, for 8-12 minutes until they blister and burst. Gently press any unburst tomatoes.
- 4. Build Sauce Base: Stir in water or broth. Bring to a gentle simmer. Season with salt and pepper.
- 5. Simmer and Finish: Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld. Remove from heat, stir in fresh basil and Parmesan cheese. Taste and adjust seasonings.
- 6. Serve: Toss with cooked spaghetti and serve immediately with extra Parmesan.
