Description

Discover how to make a delicious cherry tomato spaghetti sauce with our step-by-step recipe. This easy-to-make sauce brings out the best flavor of fresh cherry tomatoes.

Ingredients

  • 1.5 lbs (about 45 cups) cherry tomatoes, whole or halved if large
  • 45 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup water or vegetable broth (plus more if needed)
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup freshly grated Parmesan cheese (plus more for serving)
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and freshly cracked black pepper to taste
  • 1 lb spaghetti or your favorite pasta

Instructions

  • 1. Prep Ingredients: Rinse cherry tomatoes. Mince garlic. Chop basil.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
  • 3. Cook Tomatoes: Add cherry tomatoes to the skillet. Cook, stirring occasionally, for 8-12 minutes until they blister and burst. Gently press any unburst tomatoes.
  • 4. Build Sauce Base: Stir in water or broth. Bring to a gentle simmer. Season with salt and pepper.
  • 5. Simmer and Finish: Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld. Remove from heat, stir in fresh basil and Parmesan cheese. Taste and adjust seasonings.
  • 6. Serve: Toss with cooked spaghetti and serve immediately with extra Parmesan.
