Description
This vibrant cherry tomato spaghetti sauce bursts with fresh, sweet, and tangy flavors, coming together in under 30 minutes. It’s the perfect weeknight meal solution that tastes like it simmered all day.
Ingredients
- 1.5 lbs (approx. 4 cups) cherry tomatoes, whole
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1 tsp sugar (optional, but recommended)
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped (optional)
- Pinch red pepper flakes (optional)
- Drizzle balsamic glaze (optional, for serving)
Instructions
- 1. Sauté Aromatics: In a large skillet or wide pot, heat olive oil over medium-low heat. Add minced garlic (and red pepper flakes, if using) and sauté for 1-2 minutes until fragrant and golden, being careful not to burn.
- 2. Add Tomatoes & Simmer: Add whole cherry tomatoes to the pan. Increase heat to medium-high and stir to coat. Once tomatoes begin to soften and some burst (5-7 minutes), reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally and gently pressing on tomatoes to help them break down.
- 3. Crush & Season: Remove lid. Use a potato masher or the back of a spoon to crush the tomatoes to your desired consistency. Season generously with salt, black pepper, and the optional sugar. Taste and adjust seasoning as needed.
- 4. Finish with Herbs: Stir in fresh basil and oregano (if using). Serve immediately over your favorite pasta, garnished with Parmesan cheese and an optional drizzle of balsamic glaze.
