A vibrant and fresh spaghetti sauce that comes together quickly, highlighting the natural sweetness of cherry tomatoes. Perfect for a quick weeknight meal with minimal effort.
Ingredients
- 1.5 lbs (about 680g) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt and freshly ground black pepper to taste
- Cooked spaghetti or your favorite pasta, for serving
Instructions
- Prep Ingredients: Wash tomatoes and mince garlic. Prepare basil.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn.
- Cook Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Stir to coat. Cook for 10-15 minutes, stirring occasionally, until most tomatoes have burst and softened. Gently press some with a spoon if needed.
- Simmer: Reduce heat to low and simmer for another 5-10 minutes, allowing flavors to meld and sauce to thicken slightly. Taste and adjust seasoning.
- Finish with Basil: Remove from heat and stir in the fresh basil. Serve immediately over cooked pasta.
