Ingredients

  • 1.5 lbs (about 680g) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, roughly chopped or torn
  • Salt and freshly ground black pepper to taste
  • Cooked spaghetti or your favorite pasta, for serving

Instructions

  • Prep Ingredients: Wash tomatoes and mince garlic. Prepare basil.
  • Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn.
  • Cook Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Stir to coat. Cook for 10-15 minutes, stirring occasionally, until most tomatoes have burst and softened. Gently press some with a spoon if needed.
  • Simmer: Reduce heat to low and simmer for another 5-10 minutes, allowing flavors to meld and sauce to thicken slightly. Taste and adjust seasoning.
  • Finish with Basil: Remove from heat and stir in the fresh basil. Serve immediately over cooked pasta.
