Description
This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor, easy to make, and perfect for a quick weeknight meal. It’s naturally sweet, tangy, and clings beautifully to every strand of pasta.
Ingredients
- 1 lb (about 4 cups) cherry tomatoes, washed
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn or chopped
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1 lb spaghetti
- 1 cup reserved pasta water
Instructions
- 1. Cook spaghetti according to package directions in heavily salted water. Reserve 1 cup of pasta water before draining.
- 2. In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.
- 3. Add cherry tomatoes, salt, and pepper to the skillet. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until tomatoes blister and burst. Gently crush any unburst tomatoes with a spoon.
- 4. Reduce heat to low. Stir in 1/2 cup reserved pasta water and simmer for 5-7 minutes, allowing sauce to thicken slightly.
- 5. Remove from heat and stir in fresh basil. Taste and adjust seasoning as needed.
- 6. Add drained spaghetti directly to the sauce and toss until well coated. Serve immediately.
