Ingredients
- 2 lbs (about 900g) cherry or grape tomatoes
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 6–8 cloves garlic, minced or thinly sliced
- 1/2 teaspoon red pepper flakes (optional, to taste)
- 1/2 cup fresh basil, roughly chopped or torn
- 2 tablespoons fresh oregano, roughly chopped or torn
- Salt and freshly ground black pepper, to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- Preheat oven to 400°F (200°C). Arrange cherry tomatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss. Roast for 20-25 minutes until softened and bursting.
- While tomatoes roast, heat a large skillet or Dutch oven over medium heat with a splash of olive oil. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
- Add roasted tomatoes with their juices to the skillet. Gently mash some tomatoes to create a saucier consistency. Simmer for 10-15 minutes, stirring occasionally.
- Remove from heat, stir in fresh basil and oregano. Taste and adjust seasonings as needed.
- Serve immediately over cooked spaghetti, garnished with Parmesan cheese and extra fresh basil.
