Description
This simple yet incredibly flavorful cherry tomato spaghetti sauce brings out the best of fresh, sweet tomatoes. Perfect for a quick weeknight meal or a delightful weekend pasta dish.
Ingredients
- 1.5 lbs fresh cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper, to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- Wash and prepare cherry tomatoes. Mince garlic.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté for 1 minute until fragrant.
- Add cherry tomatoes, salt, and pepper to the skillet. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally and gently mashing some tomatoes to release juices.
- Reduce heat to low and simmer for 5-7 minutes to allow flavors to meld.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning.
- Serve immediately over cooked pasta.
