Description
An incredibly easy and flavorful cherry tomato spaghetti sauce that comes together quickly. Bursting with natural sweetness and fresh herbs, it’s perfect for any pasta night.
Ingredients
- 2 lbs cherry tomatoes (about 4–5 cups), whole or halved if very large
- 3–4 cloves garlic, minced
- 1 small yellow onion, diced
- 3–4 tbsp extra virgin olive oil
- 1/2 cup fresh basil, roughly chopped or torn
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/4 tsp red pepper flakes, or to taste (optional)
- Pasta of your choice, for serving
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- 1. Prep Ingredients: Wash cherry tomatoes. Mince garlic and dice onion. Have basil ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 mins). Add garlic and red pepper flakes; cook for 1 minute until fragrant.
- 3. Add Tomatoes & Simmer: Add cherry tomatoes, salt, and pepper to the pan. Cover and simmer for 15-20 minutes, stirring occasionally and gently pressing on tomatoes to burst.
- 4. Thicken Sauce: Uncover and continue to simmer for 5-10 minutes, allowing the sauce to thicken to your desired consistency.
- 5. Finish with Basil: Remove from heat and stir in fresh basil. Taste and adjust seasonings as needed. Serve immediately with your favorite pasta.
