This vibrant and flavorful cherry tomato spaghetti sauce comes together in under 30 minutes, delivering a gourmet taste with minimal effort. It’s the perfect weeknight meal solution for fresh, homemade goodness.
Ingredients
- 1.5 lbs (about 4 cups) cherry or grape tomatoes, whole
- 3 tbsp extra virgin olive oil
- 1 small onion, finely diced
- 4–5 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 tsp dried oregano or Italian seasoning (optional)
- Salt and freshly ground black pepper to taste
- 2–3 tbsp fresh basil, chopped (for garnish)
- Pinch of sugar (optional, to balance acidity)
- 1 tbsp balsamic vinegar (optional, for depth)
Instructions
- 1. Prep Ingredients: Wash tomatoes; mince garlic and dice onion.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (3-5 min). Add garlic (and red pepper flakes) and cook for 1 minute until fragrant.
- 3. Add Tomatoes & Simmer: Add whole cherry tomatoes to the pan. Season with salt and pepper. Cover and simmer over medium-low heat for 8-10 minutes until softened and beginning to burst.
- 4. Burst & Crush: Remove lid. Use the back of a spoon to gently crush any unburst tomatoes. Stir well. Add dried herbs or balsamic vinegar if using. Simmer uncovered for 5-7 minutes to thicken.
- 5. Season & Finish: Taste and adjust seasoning (salt, pepper, sugar). Stir in fresh basil just before serving. Toss with your favorite cooked pasta and a splash of pasta water for silkiness.
