This simple yet incredibly flavorful sauce highlights the natural sweetness of burst cherry tomatoes. Perfect for a quick weeknight meal that tastes gourmet.
Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 4–5 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Cooked spaghetti or pasta of choice, for serving
- Freshly grated Parmesan cheese, for serving
Instructions
- Prep Ingredients: Wash cherry tomatoes. Mince garlic. Have basil ready.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic (and red pepper flakes, if using) and sauté for 1 minute until fragrant.
- Cook Tomatoes: Add cherry tomatoes to the pan. Season with salt and pepper. Cover and cook for 8-10 minutes, stirring occasionally, until most tomatoes have burst.
- Simmer Sauce: Uncover and gently press any remaining whole tomatoes. Simmer uncovered for 5-7 minutes to slightly reduce and thicken the sauce.
- Finish and Serve: Remove from heat, stir in fresh basil. Taste and adjust seasoning. Toss with hot cooked pasta and serve immediately with Parmesan cheese.
