Description
This easy cherry tomato spaghetti sauce bursts with sweet, concentrated tomato flavor thanks to simple roasting. It’s a quick, flavorful, and incredibly satisfying meal.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–6 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon kosher salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/2 cup fresh basil leaves, torn or chopped
- Optional: Pinch of sugar if tomatoes are tart
Instructions
- Step 1: Prep Tomatoes & Garlic: Preheat oven to 400°F (200°C). Place cherry tomatoes on a rimmed baking sheet. Scatter minced garlic over tomatoes. Drizzle with olive oil, salt, and pepper. Toss to coat.
- Step 2: Roast for Flavor: Roast for 25-35 minutes, or until tomatoes are soft, burst, and slightly caramelized.
- Step 3: Transform into Sauce: Remove from oven. Crush tomatoes with a fork for a chunky sauce, or pulse in a food processor/immersion blender for a smoother consistency.
- Step 4: Finish & Season: Stir in fresh basil. Taste and adjust seasoning with additional salt, pepper, or a pinch of sugar if needed. Serve hot over your favorite pasta.
