Description
This vibrant and fresh cherry tomato spaghetti sauce is your new weeknight obsession. It’s bursting with natural sweetness and comes together in less than 30 minutes for a truly delicious meal.
Ingredients
- 1 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 2 pints (about 4 cups) cherry tomatoes, halved
- 1/2 tsp sea salt, or to taste
- 1/4 tsp black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- Optional: Pinch of red pepper flakes, drizzle of balsamic glaze
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook until softened, 5-7 minutes. Add minced garlic and cook for 1 minute until fragrant.
- Add halved cherry tomatoes, salt, pepper, and optional sugar. Stir, then cover and simmer over medium-low heat for 10-15 minutes, until tomatoes are soft and bursting.
- Uncover and gently crush any remaining whole tomatoes with the back of a spoon. Continue to simmer, uncovered, for 5-10 minutes, allowing the sauce to thicken slightly.
- Remove from heat. Stir in fresh basil and oregano. Taste and adjust seasonings as needed.
- Serve hot over your favorite pasta, or use as desired.
