Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, roughly chopped or torn
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: Freshly grated Parmesan cheese, for serving

Instructions

  • Step 1: Prep Ingredients. Wash and, if large, halve your cherry tomatoes. Mince the garlic.
  • Step 2: Sauté Aromatics. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30 seconds to 1 minute until fragrant.
  • Step 3: Cook Tomatoes. Add cherry tomatoes to the pan. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until the tomatoes soften and burst.
  • Step 4: Simmer and Season. Lightly mash some of the burst tomatoes to create a saucier consistency. Season with salt and black pepper. Reduce heat to low and simmer for 5-7 minutes.
  • Step 5: Finish with Basil. Remove from heat and stir in fresh basil. Serve immediately over cooked spaghetti, garnished with Parmesan cheese if desired.
