This vibrant cherry tomato spaghetti sauce comes together in minutes, bursting with fresh flavors. It’s the perfect light yet satisfying meal for any night of the week.
Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt to taste
- Freshly ground black pepper to taste
- Optional: Freshly grated Parmesan cheese, for serving
Instructions
- Step 1: Prep Ingredients. Wash and, if large, halve your cherry tomatoes. Mince the garlic.
- Step 2: Sauté Aromatics. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30 seconds to 1 minute until fragrant.
- Step 3: Cook Tomatoes. Add cherry tomatoes to the pan. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until the tomatoes soften and burst.
- Step 4: Simmer and Season. Lightly mash some of the burst tomatoes to create a saucier consistency. Season with salt and black pepper. Reduce heat to low and simmer for 5-7 minutes.
- Step 5: Finish with Basil. Remove from heat and stir in fresh basil. Serve immediately over cooked spaghetti, garnished with Parmesan cheese if desired.
