This easy homemade cherry tomato spaghetti sauce bursts with fresh, sweet flavors and is perfect for any pasta night. It’s incredibly versatile and comes together with minimal effort.
Ingredients
- 2 lbs cherry or grape tomatoes
- 3 Tbsp extra virgin olive oil
- 4–6 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil, roughly chopped
- Salt and freshly ground black pepper, to taste
- Optional: 1 tsp balsamic glaze or pinch of sugar
- Cooked pasta, for serving
- Freshly grated Parmesan or Pecorino Romano cheese, for serving
Instructions
- Prep Ingredients: Rinse tomatoes. Mince garlic. Roughly chop basil.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
- Cook Tomatoes: Add cherry tomatoes to the pan. Season generously with salt and pepper. Increase heat to medium-high and cook for 10-15 minutes, stirring occasionally, until tomatoes burst. Gently press some with a spoon.
- Simmer: Reduce heat to low, cover, and simmer for 15-20 minutes, allowing flavors to meld. Stir occasionally.
- Finish and Serve: Stir in fresh basil. Taste and adjust seasoning (add balsamic glaze or sugar if needed). Toss with cooked pasta and serve with grated cheese.
