Ingredients
- 2 pints (about 4 cups) fresh cherry tomatoes
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, finely minced
- 1/2 small onion or 1 large shallot, finely diced
- 1/2 teaspoon red pepper flakes (optional, for a little heat)
- 1/2 teaspoon dried oregano (or 1 tsp fresh, chopped)
- Salt and freshly ground black pepper to taste
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Optional: A splash of balsamic vinegar for brightness
Instructions
- 1. Prep Ingredients: Wash cherry tomatoes. Mince garlic and dice onion. Have all other ingredients ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add garlic, onion, and red pepper flakes (if using). Sauté for 5-7 minutes until onions are translucent and garlic is fragrant, being careful not to brown the garlic.
- 3. Cook Tomatoes: Add whole cherry tomatoes to the pan. Season generously with salt and pepper. Increase heat to medium-high and stir to coat. As tomatoes soften and burst, gently press some with a spoon. Reduce heat to medium-low, cover, and simmer for 20-25 minutes, stirring occasionally, until tomatoes have completely broken down into a saucy consistency.
- 4. Finish & Serve: Remove from heat. Stir in fresh basil. Taste and adjust seasonings (salt, pepper, or a splash of balsamic vinegar) as needed. Serve hot over your favorite pasta, garnished with Parmesan cheese.
