Description
This easy cherry tomato spaghetti sauce bursts with fresh, sweet flavor and comes together in under 30 minutes. It’s the perfect weeknight meal for a healthy and delicious dinner.
Ingredients
- 1.5 lbs (about 680g) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/4 – 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: 1/4 cup dry white wine or 1 tsp balsamic vinegar
Instructions
- Wash and halve cherry tomatoes. Mince garlic and chop basil.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- Add tomatoes, salt, and pepper to the skillet. Add wine or balsamic vinegar if using. Increase heat to medium-high.
- Cook for 10-15 minutes, stirring occasionally and gently pressing some tomatoes to burst, until they soften and the sauce thickens.
- Remove from heat, stir in fresh basil. Taste and adjust seasonings. Serve immediately with your favorite pasta.
