Ingredients
- 1.5 lbs (about 680g) cherry or grape tomatoes, halved
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp sea salt, or to taste
- 1/4 tsp black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- 1/2 cup fresh basil leaves, chopped
- Optional: Red pepper flakes for heat
Instructions
- 1. Prep Tomatoes: Halve all cherry tomatoes.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn.
- 3. Cook Tomatoes: Add halved tomatoes, salt, and pepper to the pan. Cover and cook for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Simmer & Thicken: Uncover the pan. Gently crush some tomatoes with the back of a spoon. Simmer for another 5-10 minutes, uncovered, allowing sauce to reduce slightly. Add a pinch of sugar if desired.
- 5. Finish: Remove from heat. Stir in fresh chopped basil. Taste and adjust seasoning. Serve immediately with your favorite pasta.
