Ingredients
- 2 pints (about 4 cups) fresh cherry or grape tomatoes
- 4–6 cloves garlic, minced or thinly sliced
- 1/4 cup good quality extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt and freshly ground black pepper to taste
Instructions
- 1. Prep Tomatoes & Garlic: Rinse tomatoes. Mince or slice garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant and lightly golden.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Cover and simmer for 10-15 minutes, stirring occasionally, until most tomatoes have burst. Gently crush any remaining whole tomatoes with a spoon.
- 4. Finish with Basil: Remove from heat. Stir in fresh basil. Taste and adjust seasoning as needed. Serve immediately with your favorite pasta.
