Description

A vibrant, easy-to-make spaghetti sauce bursting with the natural sweetness of cherry tomatoes and fresh basil. Perfect for a quick weeknight meal.


Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 pints (about 4 cups) fresh cherry tomatoes, halved
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • Pinch of sugar (optional, to balance acidity)
  • 1/2 cup fresh basil leaves, chopped

Instructions

  • Heat olive oil in a large skillet over medium heat. Add onion and cook until softened and translucent, about 5-7 minutes.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in cherry tomatoes, salt, pepper, and sugar (if using). Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until tomatoes are soft and bursting.
  • Remove lid and gently mash about half of the tomatoes with the back of a spoon or a potato masher for a rustic texture.
  • Taste and adjust seasoning as needed.
  • Stir in fresh chopped basil just before serving.
  • Serve hot over your favorite pasta.
