Description
A vibrant, easy-to-make spaghetti sauce bursting with the natural sweetness of cherry tomatoes and fresh basil. Perfect for a quick weeknight meal.
Ingredients
- 1 tbsp extra virgin olive oil
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 2 pints (about 4 cups) fresh cherry tomatoes, halved
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- Pinch of sugar (optional, to balance acidity)
- 1/2 cup fresh basil leaves, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened and translucent, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in cherry tomatoes, salt, pepper, and sugar (if using). Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until tomatoes are soft and bursting.
- Remove lid and gently mash about half of the tomatoes with the back of a spoon or a potato masher for a rustic texture.
- Taste and adjust seasoning as needed.
- Stir in fresh chopped basil just before serving.
- Serve hot over your favorite pasta.
