Ingredients
- 3 lbs (about 6 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced or thinly sliced
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil, torn or chopped
- 1/2 tsp red pepper flakes (optional)
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Wash tomatoes. Mince garlic.
- Heat olive oil over medium-low heat. Add garlic and red pepper flakes (if using); cook until fragrant (1-2 mins). Do not burn.
- Add cherry tomatoes to the skillet. Increase heat to medium. Cook for 10-15 minutes, stirring occasionally, until tomatoes blister and burst.
- Using the back of a spoon, gently smash any remaining whole tomatoes. Continue cooking for 5-10 minutes until the sauce slightly thickens.
- Remove from heat. Stir in fresh basil. Season generously with salt and black pepper to taste.
- Serve hot over your favorite pasta.
