Ingredients

  • 3 lbs (about 6 cups) cherry or grape tomatoes
  • 34 cloves garlic, minced or thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, torn or chopped
  • 1/2 tsp red pepper flakes (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Wash tomatoes. Mince garlic.
  • Heat olive oil over medium-low heat. Add garlic and red pepper flakes (if using); cook until fragrant (1-2 mins). Do not burn.
  • Add cherry tomatoes to the skillet. Increase heat to medium. Cook for 10-15 minutes, stirring occasionally, until tomatoes blister and burst.
  • Using the back of a spoon, gently smash any remaining whole tomatoes. Continue cooking for 5-10 minutes until the sauce slightly thickens.
