This vibrant and flavorful cherry tomato spaghetti sauce showcases the natural sweetness of roasted tomatoes. It’s an easy-to-make recipe that promises a fresh, gourmet touch to any pasta dish.
Ingredients
- 2 lbs cherry tomatoes (or grape tomatoes)
- 6–8 cloves garlic, sliced or roughly chopped
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/2 tsp granulated sugar (optional, for balancing acidity)
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: 1 tsp fresh oregano or thyme, chopped
- Optional: 1/4 tsp red pepper flakes
- Optional: Drizzle of balsamic glaze or vinegar
- Cooked spaghetti or your favorite pasta, for serving
Instructions
- Preheat oven to 400°F (200°C). Arrange cherry tomatoes and garlic on a baking sheet. Drizzle with olive oil, season with salt, pepper, and sugar. Toss to coat.
- Roast for 20-30 minutes, or until tomatoes are softened, bursting, and slightly caramelized.
- Transfer roasted tomatoes and juices to a saucepan. Gently crush some tomatoes with a spoon or masher.
- Simmer over medium-low heat for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
- Remove from heat. Stir in fresh basil and any other fresh herbs.
- Taste and adjust seasoning as needed. Stir in red pepper flakes or balsamic glaze if desired. Serve immediately over hot pasta.
