- 1 pint (about 2 cups) cherry or grape tomatoes, halved
- 4–5 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon granulated sugar (optional, to taste)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup fresh basil leaves, roughly chopped
Instructions
- 1. Prepare Ingredients: Wash and halve the cherry tomatoes. Mince the garlic.
- 2. Sauté Garlic: Heat olive oil in a large skillet over medium-low heat. Add minced garlic and cook for 1-2 minutes until fragrant, being careful not to brown it.
- 3. Simmer Tomatoes: Add halved cherry tomatoes, salt, pepper, and optional sugar to the skillet. Increase heat to medium. Cook for 15-20 minutes, stirring occasionally, until tomatoes soften and burst. Gently press some tomatoes with the back of a spoon to help them break down.
- 4. Mash for Consistency: Use a potato masher or spoon to mash the tomatoes to your desired consistency. Continue to simmer for another 5 minutes to meld flavors.
