Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil, chopped + extra for garnish
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/2 teaspoon sugar or maple syrup
  • Optional: 1/2 teaspoon balsamic vinegar
  • 12 ounces spaghetti or your preferred pasta

Instructions

  • Wash and, if desired, halve your cherry tomatoes. Mince garlic and chop basil.
  • Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and red pepper flakes, sautéing for 30-60 seconds until fragrant.
  • Add cherry tomatoes, dried oregano, salt, and pepper to the pan. Stir to combine. Include optional sugar or balsamic vinegar now.
  • Bring to a gentle simmer, then cover and cook on low for 15-20 minutes, stirring occasionally and gently mashing some tomatoes.
  • Remove from heat, stir in fresh basil. Taste and adjust seasonings as needed.
  • Cook pasta according to package directions. Drain, reserving some pasta water. Add pasta to sauce, tossing to combine, using pasta water to achieve desired consistency. Serve immediately.
