Craft a vibrant and flavorful cherry tomato spaghetti sauce with this easy recipe. Perfect for a quick weeknight meal, this sauce bursts with fresh tomato flavor.
Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil, chopped + extra for garnish
- Salt and freshly ground black pepper, to taste
- Optional: 1/2 teaspoon sugar or maple syrup
- Optional: 1/2 teaspoon balsamic vinegar
- 12 ounces spaghetti or your preferred pasta
Instructions
- Wash and, if desired, halve your cherry tomatoes. Mince garlic and chop basil.
- Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and red pepper flakes, sautéing for 30-60 seconds until fragrant.
- Add cherry tomatoes, dried oregano, salt, and pepper to the pan. Stir to combine. Include optional sugar or balsamic vinegar now.
- Bring to a gentle simmer, then cover and cook on low for 15-20 minutes, stirring occasionally and gently mashing some tomatoes.
- Remove from heat, stir in fresh basil. Taste and adjust seasonings as needed.
- Cook pasta according to package directions. Drain, reserving some pasta water. Add pasta to sauce, tossing to combine, using pasta water to achieve desired consistency. Serve immediately.
