Ingredients
- 1 tablespoon extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 2 pints (about 4 cups) cherry tomatoes, halved
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
- 1/4 cup fresh basil leaves, roughly chopped
- Optional: Parmesan cheese for serving
Instructions
- Prep Ingredients: Wash and halve cherry tomatoes, mince garlic, and chop basil.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
- Cook Tomatoes: Add halved cherry tomatoes, increase heat to medium-high, and cook for 8-12 minutes until softened and bursting. Use a potato masher to aid this process.
- Simmer & Season: Reduce heat to low, simmer for 5-10 minutes, stirring occasionally. Season generously with salt and pepper.
- Finish with Basil: Remove from heat and stir in fresh basil. Serve immediately over your favorite pasta.
