Ingredients

  • 1.5 lbs (approx. 4 cups) cherry tomatoes, halved
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 cup fresh basil leaves, roughly chopped or torn
  • Optional: Freshly grated Parmesan cheese for serving

Instructions

  • 1. Prep Tomatoes & Aromatics: Halve all cherry tomatoes. Mince garlic.
  • 2. Sauté Garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30-60 seconds until fragrant, being careful not to burn.
  • 3. Add Tomatoes: Add halved cherry tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until tomatoes burst and release their juices.
  • 4. Simmer Sauce: Reduce heat to low and simmer for another 5-7 minutes, allowing flavors to meld and sauce to thicken slightly. Gently mash some tomatoes for a smoother consistency if desired.
  • 5. Adjust Seasoning: Taste the sauce and adjust salt, pepper, or red pepper flakes as needed.
  • 6. Finish with Herbs: Remove from heat and stir in the fresh chopped basil.
  • 7. Serve: Toss with your favorite cooked pasta and serve immediately, garnished with Parmesan cheese if desired.
