Ingredients
- 1 lb cherry or grape tomatoes, halved
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 tsp red pepper flakes (optional)
- 1 lb spaghetti or other pasta
- Salt and freshly ground black pepper, to taste
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- Prep Ingredients: Halve cherry tomatoes, slice garlic, and chop basil. Get pasta water boiling.
- Sauté Aromatics & Tomatoes: Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant (1-2 mins). Add halved tomatoes and red pepper flakes (if using). Cook 10-15 minutes, stirring occasionally, until tomatoes burst. Press any stubborn tomatoes with a spoon.
- Simmer Sauce: Reduce heat to low and simmer for 5-7 minutes to allow flavors to meld. Season generously with salt and pepper. Meanwhile, cook pasta al dente according to package directions.
- Add Basil: Just before serving, stir in the fresh basil leaves until wilted.
- Combine & Serve: Drain pasta, reserving 1 cup of pasta water. Add pasta to the sauce. Toss to combine, adding reserved pasta water as needed to create a glossy sauce. Serve immediately with Parmesan cheese.
