Ingredients

  • 1 lb cherry or grape tomatoes, halved
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1 lb spaghetti or other pasta
  • Salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions

  • Prep Ingredients: Halve cherry tomatoes, slice garlic, and chop basil. Get pasta water boiling.
  • Sauté Aromatics & Tomatoes: Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant (1-2 mins). Add halved tomatoes and red pepper flakes (if using). Cook 10-15 minutes, stirring occasionally, until tomatoes burst. Press any stubborn tomatoes with a spoon.
  • Simmer Sauce: Reduce heat to low and simmer for 5-7 minutes to allow flavors to meld. Season generously with salt and pepper. Meanwhile, cook pasta al dente according to package directions.
  • Add Basil: Just before serving, stir in the fresh basil leaves until wilted.
  • Combine & Serve: Drain pasta, reserving 1 cup of pasta water. Add pasta to the sauce. Toss to combine, adding reserved pasta water as needed to create a glossy sauce. Serve immediately with Parmesan cheese.
