Description
This simple yet incredibly flavorful cherry tomato spaghetti sauce is a weeknight marvel. It’s bursting with fresh tomato taste and comes together in under 30 minutes.
Ingredients
- 1.5 lbs cherry or grape tomatoes
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, torn or chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or your favorite pasta
- 1/2 cup reserved pasta water
Instructions
- 1. Rinse cherry tomatoes. Mince garlic.
- 2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
- 3. Add cherry tomatoes, salt, and pepper. Cook for 8-12 minutes, stirring occasionally, until tomatoes blister and burst.
- 4. Gently mash some tomatoes with a spoon or potato masher for desired consistency. Cook 2-3 minutes more.
- 5. Remove from heat. Stir in fresh basil. Taste and adjust seasoning.
- 6. Cook pasta. Reserve 1/2 cup pasta water. Add drained pasta to sauce; toss to coat, adding pasta water as needed.
