Description
This vibrant cherry tomato spaghetti sauce is a burst of fresh flavor, perfect for a quick weeknight meal or a casual gathering. It’s incredibly simple to make, yet tastes like it simmered all day.
Ingredients
- 2 lbs cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly torn
- Salt and freshly ground black pepper, to taste
- Optional: 1/4 cup dry white wine, Parmesan rind
Instructions
- 1. Rinse and dry tomatoes. Mince garlic.
- 2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté 1-2 minutes until fragrant.
- 3. Add tomatoes to the skillet. Increase heat to medium-high and cook 8-10 minutes, until many burst and soften.
- 4. Gently crush remaining tomatoes with a potato masher. Simmer 5-7 minutes to thicken. Add wine if using and reduce.
- 5. Remove from heat. Stir in fresh basil, salt, and pepper. Taste and adjust seasoning.
