Ingredients

  • 1 pint (about 2 cups) cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 45 cloves garlic, thinly sliced or minced
  • 1 small shallot or 1/4 small yellow onion, finely diced
  • 1/4 tsp red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, torn or roughly chopped
  • Salt and freshly ground black pepper, to taste
  • Cooked spaghetti or pasta of choice, for serving

Instructions

  • Prep Ingredients: Halve cherry tomatoes, mince garlic and shallot/onion.
  • Sauté Aromatics: In a wide skillet over medium heat, heat olive oil. Add shallot/onion and cook until translucent (3-5 mins). Add garlic and red pepper flakes; cook for 1 minute until fragrant.
  • Add Tomatoes & Simmer: Add halved cherry tomatoes, salt, and pepper. Increase heat to medium-high. Cook, stirring occasionally, until tomatoes begin to burst (5-7 mins). Reduce heat to low, cover, and simmer for 10-15 minutes.
  • Burst & Mash: Uncover and use the back of a spoon to gently mash any unburst tomatoes, releasing their juices and thickening the sauce.
  • Finish & Season: Remove from heat. Stir in fresh basil. Taste and adjust seasoning as needed. Serve immediately over hot pasta.
