Description

Ingredients

  • 2 lbs (approx. 900g) cherry or grape tomatoes
  • 46 cloves garlic, peeled and roughly chopped
  • 1/2 small yellow onion, roughly chopped
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon sea salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 1/2 cup fresh basil leaves, roughly torn, plus extra for garnish
  • Cooked spaghetti or pasta of choice, for serving
  • Freshly grated Parmesan or Pecorino cheese, for garnish

Instructions

  • Preheat Oven & Prep Ingredients: Preheat your oven to 400°F (200°C). Wash and dry cherry tomatoes. Halve any larger tomatoes. On a large baking sheet, combine tomatoes, chopped garlic, and onion. Drizzle with olive oil, sprinkle with dried oregano, red pepper flakes (if using), salt, and black pepper. Toss to coat evenly.
  • Roast Tomatoes: Spread the mixture in a single layer on the baking sheet. Roast for 25-35 minutes, or until tomatoes are blistered, softened, and slightly caramelized. Stir halfway through.
  • Blend Sauce: Transfer the roasted tomato mixture (including all pan juices) to a blender or food processor. Pulse a few times for a chunky sauce, or blend until smooth for a creamy consistency. Add a splash of pasta water or vegetable broth if needed to thin.
  • Simmer for Flavor: Pour the blended sauce into a saucepan. Bring to a gentle simmer over medium-low heat and cook for 10-15 minutes, stirring occasionally, allowing flavors to meld. Taste and adjust seasonings as desired.
  • Finish & Serve: Remove from heat and stir in the fresh basil leaves. Toss the warm sauce with cooked spaghetti or your favorite pasta. Serve immediately, garnished with extra fresh basil and freshly grated cheese.
