Ingredients
- 2 pints (about 4 cups) cherry tomatoes, whole
- 1/4 cup extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil, roughly chopped
- Salt and freshly ground black pepper, to taste
- 1 lb spaghetti or your favorite pasta
- 1/2 cup reserved pasta water (optional)
Instructions
- 1. Prep Ingredients: Wash cherry tomatoes. Mince garlic and chop fresh basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- 3. Add Tomatoes and Simmer: Add cherry tomatoes to the pan. Increase heat to medium-high until sizzling, then reduce to medium-low, cover, and simmer for 10-15 minutes until tomatoes burst.
- 4. Season and Mash: Uncover, season with salt and pepper. Gently mash some of the burst tomatoes with a spoon or masher to create a saucy consistency. Taste and adjust seasoning.
- 5. Finish with Basil: Turn off heat and stir in fresh basil. Toss with cooked pasta, adding reserved pasta water if a silkier sauce is desired. Serve immediately.
