This vibrant cherry tomato spaghetti sauce is incredibly quick, flavorful, and made with simple ingredients. It’s the perfect weeknight meal for a burst of fresh, sweet, and savory goodness.


Ingredients

  • 1.5 lbs (about 4 cups) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/4 cup fresh basil, roughly chopped or torn
  • 2 tablespoons fresh oregano, leaves picked and chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: Freshly grated Parmesan cheese for serving
  • Optional: Balsamic glaze for drizzling

Instructions

  • 1. Prep Ingredients: Wash tomatoes. Mince garlic. Chop basil and oregano.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and lightly golden.
  • 3. Simmer Tomatoes: Add cherry tomatoes to the skillet. Season generously with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, until tomatoes soften and burst (8-12 minutes). Gently press some tomatoes with a spoon. Reduce heat to medium-low and simmer for 5-10 minutes until sauce slightly thickens.
  • 4. Finish with Herbs: Remove from heat. Stir in most of the fresh basil and oregano, reserving some for garnish.
  • 5. Adjust Seasoning: Taste and adjust salt, pepper, or red pepper flakes as needed. Serve immediately over your favorite pasta, garnished with remaining herbs, Parmesan, and a drizzle of balsamic glaze if desired.
