  • Total Time: 25 minutes
  • Yield: 4 servings

Description

This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor and comes together in under 30 minutes. It’s the perfect weeknight meal or a delightful addition to any pasta dish.

Ingredients

  • 1 lb cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, torn
  • Salt and freshly ground black pepper to taste

Instructions

  • Prep Your Ingredients: Wash and halve cherry tomatoes, mince garlic, and tear basil leaves.
  • Sauté Garlic: Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes (if using). Cook for 1-2 minutes until fragrant, being careful not to brown.
  • Cook Tomatoes: Add halved cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium and cook for 10-15 minutes, stirring occasionally, until tomatoes soften, wrinkle, and burst.
  • Mash for Consistency: Use the back of a wooden spoon or a potato masher to gently mash some of the burst tomatoes to create your desired sauce consistency.
  • Finish with Basil: Remove from heat and stir in fresh basil leaves. Taste and adjust seasonings as needed. Serve immediately with your favorite pasta.
