This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor and comes together in under 30 minutes. It’s the perfect weeknight meal or a delightful addition to any pasta dish.
Ingredients
- 1 lb cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, torn
- Salt and freshly ground black pepper to taste
Instructions
- Prep Your Ingredients: Wash and halve cherry tomatoes, mince garlic, and tear basil leaves.
- Sauté Garlic: Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes (if using). Cook for 1-2 minutes until fragrant, being careful not to brown.
- Cook Tomatoes: Add halved cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium and cook for 10-15 minutes, stirring occasionally, until tomatoes soften, wrinkle, and burst.
- Mash for Consistency: Use the back of a wooden spoon or a potato masher to gently mash some of the burst tomatoes to create your desired sauce consistency.
- Finish with Basil: Remove from heat and stir in fresh basil leaves. Taste and adjust seasonings as needed. Serve immediately with your favorite pasta.
