Description
A vibrant and naturally sweet cherry tomato spaghetti sauce bursting with fresh flavors. Perfect for a quick weeknight meal or a leisurely Sunday dinner.
Ingredients
- 1.5 lbs (approx. 680g) cherry or grape tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp granulated sugar (or to taste)
- 1/4 cup fresh basil leaves, torn or chopped, plus more for garnish
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup dry red or white wine
Instructions
- 1. Prepare Ingredients: Wash and pat dry cherry tomatoes. Mince garlic. Tear basil leaves.
- 2. Sauté Garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant; do not brown.
- 3. Cook Tomatoes: Add cherry tomatoes, sugar, salt, and pepper to the skillet. Cover and cook for 8-10 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Simmer Sauce: Uncover and gently crush any unburst tomatoes with a spoon. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until sauce thickens. (Optional: Add wine during this stage and simmer until evaporated.)
- 5. Finish: Remove from heat, stir in most of the fresh basil. Taste and adjust seasoning. Serve immediately over your favorite pasta, garnished with extra fresh basil.
