Craft a vibrant, fresh, and naturally sweet spaghetti sauce bursting with flavor from ripe cherry tomatoes. This easy recipe comes together quickly for an unforgettable meal.
Ingredients
- 1.5 lbs (680g) cherry or grape tomatoes
- 3 tablespoons extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, chopped (plus more for garnish)
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 teaspoon granulated sugar (optional, to balance acidity)
- 1 lb spaghetti or your favorite pasta
Instructions
- 1. Prepare Ingredients: Rinse tomatoes. Mince garlic. Chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn.
- 3. Add Tomatoes & Burst: Add cherry tomatoes to the pan. Cover and cook for 10-15 minutes, stirring occasionally, until most tomatoes have softened and burst.
- 4. Mash & Simmer: Remove lid. Using a spoon or potato masher, gently mash any remaining whole tomatoes. Simmer uncovered for another 5-10 minutes, allowing sauce to thicken slightly.
- 5. Finish & Season: Remove from heat. Stir in fresh basil. Season generously with salt, pepper, and optional sugar. Taste and adjust seasonings as needed.
- 6. Serve: Toss with cooked pasta, reserving some pasta water to adjust consistency if desired. Garnish with more fresh basil and grated Parmesan cheese.
